Description

These Okra Patties are a crispy, golden Southern treat made with chopped okra, cornmeal, and a flavorful blend of seasonings. Perfect as a snack, side dish, or appetizer, they’re quick to fry and pair beautifully with a variety of dipping sauces. A delicious way to enjoy okra—even for those who think they don’t like it!


Ingredients

  • 1 lb fresh or frozen okra (thawed if frozen), chopped finely

  • 1/2 cup cornmeal

  • 1/2 cup all-purpose flour

  • 1/4 cup grated Parmesan cheese (optional)

  • 1 small onion, finely chopped

  • 1/4 cup chopped fresh parsley (optional)

  • 2 eggs, beaten

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 1/4 cup milk (or buttermilk)

  • Vegetable oil for frying


Instructions

  • Prepare Okra: Wash and chop fresh okra or thaw and drain frozen okra thoroughly.

  • Mix Ingredients: In a bowl, combine okra, cornmeal, flour, Parmesan (if using), onion, parsley, garlic powder, paprika, salt, and pepper.

  • Add Wet Ingredients: Mix in eggs and milk or buttermilk until the mixture is thick but sticky. Adjust with flour or cornmeal if too wet.

  • Shape Patties: Form mixture into 2–3 inch patties with your hands.

  • Fry Patties: Heat 1/4 inch oil in a skillet over medium-high heat. Fry patties in batches for 3–4 minutes per side until golden and crispy.

  • Drain & Serve: Place patties on paper towels to drain. Serve hot with dipping sauces like ranch, hot sauce, or remoulade.


Notes

  • Use buttermilk for a richer flavor.

  • Parmesan adds umami but can be omitted for dairy-free version.

  • Freeze extras and reheat in a toaster oven for crispiness.
