Ingredients

1 lb fresh or frozen okra (thawed if frozen), chopped finely

1/2 cup cornmeal

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese (optional)

1 small onion, finely chopped

1/4 cup chopped fresh parsley (optional)

2 eggs, beaten

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup milk (or buttermilk)

Instructions

Prepare Okra: Wash and chop fresh okra or thaw and drain frozen okra thoroughly.

Mix Ingredients: In a bowl, combine okra, cornmeal, flour, Parmesan (if using), onion, parsley, garlic powder, paprika, salt, and pepper.

Add Wet Ingredients: Mix in eggs and milk or buttermilk until the mixture is thick but sticky. Adjust with flour or cornmeal if too wet.

Shape Patties: Form mixture into 2–3 inch patties with your hands.

Fry Patties: Heat 1/4 inch oil in a skillet over medium-high heat. Fry patties in batches for 3–4 minutes per side until golden and crispy.

Drain & Serve: Place patties on paper towels to drain. Serve hot with dipping sauces like ranch, hot sauce, or remoulade.
