Ingredients

→ Base:

  • 1 package of English muffins, split and toasted

→ Eggs:

  • 8 eggs

  • Splash of milk (optional, for scrambling)

→ Meat:

  • 1 lb chicken breakfast sausage

→ Cheese:

  • 8 oz mild cheddar cheese, thinly sliced

→ Sawmill Gravy:

  • 2 cups milk

  • 1/4 cup sausage drippings (or butter if needed)

  • 1/4 cup flour

  • 1/2 teaspoon salt (or to taste)

  • 1/4 teaspoon pepper (or to taste)


Instructions

Step 1: Cook the Chicken Sausage

  1. In a cast iron skillet, brown chicken sausage over medium heat, crumbling as it cooks.

  2. Set aside and reserve ¼ cup drippings (add butter if needed).

Step 2: Make the Sawmill Gravy
3. To hot drippings, add flour and whisk to form a roux.
4. Stir constantly for 5–10 minutes until golden.
5. Gradually whisk in milk and cook until thickened.
6. Season with salt and pepper to taste.

Step 3: Toast the English Muffins
7. Toast English muffin halves until golden and crisp.

Step 4: Scramble the Eggs
8. In a non-stick pan, scramble eggs (add splash of milk if desired).
9. Stir until just set and remove from heat.

Step 5: Assemble the Breakfast Pizzas
10. Set oven broiler to high.
11. On a baking tray, lay muffin halves cut side up.
12. Add gravy, then scrambled eggs, cheese, and sausage.

Step 6: Broil and Serve
13. Broil 1–2 minutes until cheese is melted and bubbly.
