1/4 cup cookie butter (e.g., Biscoff or Speculoos spread)
-
1/4 cup powdered sugar

1/2 tsp vanilla extract
-
20-25 large strawberries (hulled and slightly hollowed out)

Instructions
-
In a mixing bowl, beat the softened cream cheese until smooth and creamy.
-
Add the cookie butter, powdered sugar, and vanilla extract. Beat again until fully combined and fluffy.
-
Prepare the strawberries by washing, hulling, and carefully hollowing out the centers to create space for the filling.
-
Transfer the cheesecake mixture to a piping bag (or a zip-top bag with a corner snipped off).
-
Pipe the filling into each prepared strawberry.
-
Optionally, sprinkle with crushed Biscoff cookies for extra flavor and crunch.
-
Refrigerate until ready to serve. Enjoy chilled!
Notes
-
Make sure the cream cheese is very soft for the smoothest filling.
-
These can be made up to 4–6 hours in advance but are best served the same day.
-
Customize by dipping the stuffed strawberries in melted chocolate!
