Description

This Sweet Potato & Zucchini Ground Beef Skillet is a quick, healthy, and delicious one-pan dinner. Loaded with lean beef, tender sweet potatoes, and fresh zucchini, it’s the perfect weeknight meal packed with flavor and nutrients—ready in under 30 minutes!


Ingredients

  • 1 lb lean ground beef

  • 2 cups sweet potatoes, peeled and diced

  • 1 medium zucchini, sliced into half-moons

  • 1/2 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • In a large skillet, heat olive oil over medium-high heat.

  • Add ground beef and cook until browned and crumbly. Season with salt, pepper, smoked paprika, and cumin.

  • Stir in chopped onion and minced garlic. Sauté until softened and fragrant.

  • Push the beef mixture to one side of the skillet. Add diced sweet potatoes to the other side and cook, stirring occasionally, until tender (about 8–10 minutes).

  • Mix sweet potatoes with the beef and add zucchini. Cook for an additional 5–6 minutes until zucchini is tender-crisp.

  • Adjust seasoning to taste.

  • Garnish with fresh parsley and serve hot.

  • For a spicier kick, add a pinch of red pepper flakes.
