Ingredients

1 lb lean ground beef

2 cups sweet potatoes, peeled and diced

1 medium zucchini, sliced into half-moons

1/2 onion, finely chopped

2 cloves garlic, minced

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp cumin

Salt and pepper to taste

Instructions

In a large skillet, heat olive oil over medium-high heat.

Add ground beef and cook until browned and crumbly. Season with salt, pepper, smoked paprika, and cumin.

Stir in chopped onion and minced garlic. Sauté until softened and fragrant.

Push the beef mixture to one side of the skillet. Add diced sweet potatoes to the other side and cook, stirring occasionally, until tender (about 8–10 minutes).

Mix sweet potatoes with the beef and add zucchini. Cook for an additional 5–6 minutes until zucchini is tender-crisp.
