This easy Strawberry Cream Cheese Chill Pie is the ultimate no-bake summer dessert! Featuring a creamy filling, fresh strawberries, and a buttery graham cracker crust, this refreshing treat delivers pure berry bliss in every bite.
Ingredients
For the Filling and Topping:
-
1 graham cracker crust (9-inch)
-
5 cups fresh strawberries (divided)
-
1/2 cup granulated sugar
-
1 1/2 tbsp cornstarch
-
8 oz vegan cream cheese (or regular, if not vegan), softened
-
1/3 cup powdered sugar
-
1 tsp vanilla extract
-
1 cup whipped topping (store-bought or homemade vegan whipped cream)
Instructions
-
In a small saucepan, combine 1 cup of the strawberries (chopped), granulated sugar, and cornstarch.
-
Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy (about 5–7 minutes). Let it cool completely.
-
In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
-
Fold in the whipped topping gently until fully combined.
-
Spread the cream cheese mixture evenly into the graham cracker crust.
-
Arrange the remaining fresh strawberries (halved or whole) on top of the cream cheese layer.
-
Spoon the cooled strawberry glaze over the fresh strawberries to coat them beautifully.
-
Refrigerate for at least 3–4 hours, or until set and chilled.
-
Slice, serve, and enjoy!
Notes
-
Make sure the cooked strawberry glaze is completely cool before topping the pie to avoid melting the filling.
-
For an extra glossy finish, brush additional glaze on the strawberries before serving.
-
Use firm, ripe strawberries for the best results.
