Description

This easy Strawberry Cream Cheese Chill Pie is the ultimate no-bake summer dessert! Featuring a creamy filling, fresh strawberries, and a buttery graham cracker crust, this refreshing treat delivers pure berry bliss in every bite.


Ingredients

For the Filling and Topping:

  • 1 graham cracker crust (9-inch)

  • 5 cups fresh strawberries (divided)

  • 1/2 cup granulated sugar

  • 1 1/2 tbsp cornstarch

  • 8 oz vegan cream cheese (or regular, if not vegan), softened

  • 1/3 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup whipped topping (store-bought or homemade vegan whipped cream)


Instructions

  • In a small saucepan, combine 1 cup of the strawberries (chopped), granulated sugar, and cornstarch.

  • Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy (about 5–7 minutes). Let it cool completely.

  • In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.

  • Fold in the whipped topping gently until fully combined.

  • Spread the cream cheese mixture evenly into the graham cracker crust.

  • Arrange the remaining fresh strawberries (halved or whole) on top of the cream cheese layer.

  • Spoon the cooled strawberry glaze over the fresh strawberries to coat them beautifully.

  • Refrigerate for at least 3–4 hours, or until set and chilled.

Notes

  • Make sure the cooked strawberry glaze is completely cool before topping the pie to avoid melting the filling.
