Description

These Strawberry Cheesecake Bites are creamy, bite-sized indulgences with a graham cracker crust, rich cheesecake filling, and a sweet strawberry jam topping. Finished with a delicate white chocolate drizzle, they’re perfect for parties, holidays, or whenever you need a sweet treat.


Ingredients

For the Crust:

  • 1 cup graham cracker crumbs

  • 2 tablespoons granulated sugar

  • 4 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/4 cup sour cream

For the Topping:

  • 1/2 cup strawberry jam or preserves

  • 1/4 cup white chocolate, melted (for drizzling)


Instructions

  • Preheat oven to 325°F (163°C). Line a mini muffin pan with paper liners.

  • Mix graham cracker crumbs, sugar, and melted butter. Press about 1 teaspoon of crust into each liner. Bake for 5 minutes and cool.

  • Beat cream cheese until smooth. Add sugar, eggs, vanilla, and sour cream. Mix until creamy and well combined.

  • Spoon filling over cooled crusts, nearly to the top of each liner.

  • Bake for 15–18 minutes, until centers are just set. Cool to room temperature, then refrigerate at least 2 hours.

  • Top with strawberry jam and drizzle with melted white chocolate before serving.


Notes

  • Use a piping bag for neater filling.

  • Substitute jam with fresh berries for a fresher twist.

  • Store in the fridge for up to 5 days.
