These Strawberry Cheesecake Bites are creamy, bite-sized indulgences with a graham cracker crust, rich cheesecake filling, and a sweet strawberry jam topping. Finished with a delicate white chocolate drizzle, they’re perfect for parties, holidays, or whenever you need a sweet treat.
Ingredients
For the Crust:

1 cup graham cracker crumbs

2 tablespoons granulated sugar

4 tablespoons unsalted butter, melted
For the Cheesecake Filling:

16 oz cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup sour cream
For the Topping:

1/2 cup strawberry jam or preserves

1/4 cup white chocolate, melted (for drizzling)
Instructions

Preheat oven to 325°F (163°C). Line a mini muffin pan with paper liners.

Mix graham cracker crumbs, sugar, and melted butter. Press about 1 teaspoon of crust into each liner. Bake for 5 minutes and cool.

Beat cream cheese until smooth. Add sugar, eggs, vanilla, and sour cream. Mix until creamy and well combined.

Spoon filling over cooled crusts, nearly to the top of each liner.

Bake for 15–18 minutes, until centers are just set. Cool to room temperature, then refrigerate at least 2 hours.

Top with strawberry jam and drizzle with melted white chocolate before serving.
