Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 16 oz cream cheese, softened

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

For the strawberry topping:

  • 1 1/2 cups fresh strawberries, hulled and chopped

  • 2 tbsp granulated sugar

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch mixed with 2 tbsp water


Instructions

  • Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.

  • Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press evenly into the pan. Bake for 10 minutes; let cool.

  • Prepare cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over the cooled crust.

  • Bake: Bake for 30–35 minutes, or until the center is set. Cool completely at room temperature, then refrigerate for at least 2 hours.

  • Make strawberry topping: In a saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat for 5 minutes. Add cornstarch slurry and stir until thickened. Cool completely.

  • Assemble: Spread the strawberry topping over chilled cheesecake. Slice into bars and serve.
