For the strawberry topping:

1 tbsp cornstarch mixed with 2 tbsp water
Instructions

Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.

Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press evenly into the pan. Bake for 10 minutes; let cool.

Prepare cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over the cooled crust.

Bake: Bake for 30–35 minutes, or until the center is set. Cool completely at room temperature, then refrigerate for at least 2 hours.
