Ingredients

  • 1 lb beef stew meat, cut into small pieces

  • 1 tbsp oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 4 cups beef broth

  • 2 cups water

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 1 tsp dried thyme

  • 1 1/2 cups egg noodles

  • Salt and pepper to taste


Instructions

  • In a large pot, heat oil over medium-high heat and brown the beef pieces.

  • Add chopped onion and garlic, cooking until softened and fragrant.

  • Pour in beef broth and water. Stir in sliced carrots, celery, and thyme.

  • Bring the soup to a boil, then reduce heat to low and simmer for 30–40 minutes, until beef is tender.
