Description

Start your morning off right with this hearty Sausage & Cream Cheese Hash Brown Breakfast Casserole. Packed with savory sausage, creamy cheese, and crispy hash browns, this easy-to-make breakfast is perfect for meal prepping, brunch gatherings, or holiday mornings. It’s rich, satisfying, and incredibly flavorful with every bite.

Ingredients

  • 1 lb breakfast sausage (mild or spicy, based on preference)

  • 1 (26 oz) bag frozen hash browns, thawed

  • 8 oz cream cheese, softened

  • 1 cup shredded cheddar cheese

  • 1/2 cup milk

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 4 large eggs

  • 1/2 cup green onions, chopped (optional for garnish)

Instructions

  • Cook the Sausage: In a large skillet over medium heat, brown the sausage until fully cooked and crumbled, about 5-7 minutes. Drain excess fat.

  • Make the Sauce: In a large bowl, mix cream cheese, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper until smooth.

  • Combine Ingredients: Add thawed hash browns and cooked sausage to the bowl, mixing until well combined.

  • Add Eggs: Whisk eggs in a separate bowl, then pour into the casserole mixture and stir until incorporated.

  • Assemble: Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.

  • Bake: Bake at 350°F (175°C) for 45-50 minutes, or until the top is golden and the center is set.

Notes

  • Use spicy sausage for a little kick.

  • Make ahead and refrigerate overnight to save time in the morning.

  • Great for freezing and reheating individual portions.
