Description

This Reese’s Peanut Butter Cookie Pie is a dream dessert for peanut butter lovers! Packed with creamy peanut butter, Reese’s Pieces, and chopped Reese’s Peanut Butter Cups in a soft cookie dough baked into a flaky pie crust, this rich treat is perfect for birthdays, holidays, or anytime indulgence.


Ingredients

  • 1 (23 cm) refrigerated pie crust, thawed

  • 115 g unsalted butter, softened

  • 180 g creamy peanut butter

  • 100 g brown sugar

  • 100 g granulated sugar

  • 1 large egg

  • 10 ml vanilla extract

  • 2.5 g salt

  • 190 g all-purpose flour

  • 75 g Reese’s Pieces

  • 150 g chopped Reese’s Peanut Butter Cups


Instructions

  • Prepare the Crust:

    • Preheat oven to 175°C (350°F).

    • Fit the thawed pie crust into a pie plate and crimp or shape the edges.

  • Make the Dough:

    • In a large bowl, cream butter, peanut butter, brown sugar, and granulated sugar until smooth.

    • Mix in the egg, vanilla, and salt.

    • Gradually add flour, mixing until just combined. Do not overmix.

  • Add Candy and Bake:

    • Stir in Reese’s Pieces and chopped Reese’s Peanut Butter Cups.

    • Press the dough evenly into the pie crust.

    • Bake for 35 minutes, or until golden and set.

  • Cool and Serve:

    • Cool on a wire rack for 1 hour before slicing.

    • Optionally, serve with a scoop of vanilla ice cream and a drizzle of chocolate syrup.
