1/2 teaspoon salt
-
1/2 cup unsalted butter, softened
-
1 cup granulated sugar
-
2 large eggs
-
1/2 cup crushed pineapple with juice
-
1/4 cup sour cream (or Greek yogurt)
-
1 teaspoon vanilla extract
-
Optional: powdered sugar or cream cheese glaze for topping
Instructions
-
Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch or 9×9-inch baking pan.
-
In a medium bowl, whisk together flour, baking powder, and salt.
-
In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
-
Beat in the eggs one at a time, then mix in the vanilla.
-
Add the crushed pineapple with juice and sour cream; stir until combined.
-
Gradually add the dry ingredients to the wet ingredients, mixing until just combined—do not overmix.
-
Pour the batter into the prepared pan and smooth the top.
-
Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
-
Let cool in the pan, then top with a dusting of powdered sugar or a drizzle of cream cheese glaze, if desired.
Notes
-
For extra flair, top with toasted coconut or maraschino cherries.
-
Make it extra tropical by folding in shredded coconut or chopped pecans.
-
Best served slightly chilled or at room temp.
