Description

This moist and fluffy Pineapple Heaven Cake is a tropical dream made with juicy pineapple and rich, buttery cake layers. It’s the perfect easy dessert for summer gatherings, potlucks, or whenever you’re craving a sweet island escape!


Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1/2 cup crushed pineapple with juice

  • 1/4 cup sour cream (or Greek yogurt)

  • 1 teaspoon vanilla extract

  • Optional: powdered sugar or cream cheese glaze for topping


Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch or 9×9-inch baking pan.

  • In a medium bowl, whisk together flour, baking powder, and salt.

  • In a large mixing bowl, cream the softened butter and sugar until light and fluffy.

  • Beat in the eggs one at a time, then mix in the vanilla.

  • Add the crushed pineapple with juice and sour cream; stir until combined.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined—do not overmix.

  • Pour the batter into the prepared pan and smooth the top.

  • Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

  • Let cool in the pan, then top with a dusting of powdered sugar or a drizzle of cream cheese glaze, if desired.
