Ingredients
-
1 lb chicken breast, diced
-
1 lb smoked sausage, sliced
-
12 oz penne or rotini pasta
-
4 cups chicken broth
-
1 cup heavy cream
-
1 cup shredded cheddar cheese
-
1 packet ranch seasoning mix
-
1 small onion, diced
-
2 cloves garlic, minced
-
2 tablespoons olive oil
-
Salt and pepper, to taste
-
Chopped parsley (optional, for garnish)
Instructions
-
Sauté Proteins: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced chicken and cook until lightly browned. Add sliced sausage and continue cooking until both are golden and cooked through. Remove and set aside.
-
Cook Aromatics: In the same pot, add diced onion and garlic. Sauté for 2–3 minutes until fragrant.
-
Simmer Pasta: Add pasta, chicken broth, and ranch seasoning to the pot. Bring to a boil, reduce heat to a simmer, cover, and cook for 10–12 minutes or until pasta is tender and most of the liquid is absorbed.
-
Add Cream & Cheese: Stir in heavy cream, cheddar cheese, and the cooked chicken and sausage. Mix until everything is well combined and creamy. Cook for 2–3 more minutes to heat through.
-
Serve: Season with salt and pepper to taste. Garnish with chopped parsley and serve warm.
Notes
-
Use smoked gouda or pepper jack for a different cheesy twist.
-
Add spinach or broccoli for a veggie boost.

Great for meal prep—reheats well for next-day lunches.
