Ingredients

  • 4 boneless, skinless chicken breasts or thighs

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 1 small red onion, sliced

  • 2 cups cherry tomatoes

  • 4 garlic cloves, minced

  • 1/4 cup balsamic vinegar

  • 2 tbsp honey or maple syrup

  • 1 tsp dried basil or Italian seasoning

Instructions

  • Season chicken on both sides with salt and pepper.

  • In a large skillet, heat olive oil over medium heat. Add chicken and sear for 4–5 minutes per side until golden brown. Remove and set aside.

  • In the same skillet, add sliced onion, cherry tomatoes, and minced garlic. Cook for 3–4 minutes until softened.

  • Stir in balsamic vinegar, honey or maple syrup, and seasoning. Let simmer for 2 minutes to create the glaze.

  • Return chicken to the skillet, spoon the sauce over the top, and cook for an additional 5–7 minutes or until chicken is fully cooked and glazed.
