Description

These No-Bake Peanut Butter Crunch Bars are a quick and easy treat made with creamy peanut butter, honey, and crispy rice cereal. Perfect for a healthy snack or dessert, these bars are naturally sweetened and can be topped with dark chocolate for an extra indulgent twist.

Ingredients

  • 1 cup creamy peanut butter

  • 1/2 cup honey or maple syrup

  • 1/4 cup coconut oil

  • 3 cups rice crispy cereal

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 cup dark chocolate chips (optional, for topping)

Instructions

  • In a saucepan over medium heat, combine the peanut butter, honey (or maple syrup), and coconut oil. Stir until melted and smooth.

  • Remove from heat and mix in vanilla extract and salt.

  • Gently fold in the rice crispy cereal until fully coated.

  • Press the mixture into a parchment-lined 8×8 inch baking dish.

  • If using, melt the dark chocolate chips and drizzle or spread over the top of the bars.

  • Refrigerate for at least 1 hour or until set.

  • Slice into bars and enjoy!

Notes

  • You can substitute almond butter or sunflower seed butter for a peanut-free version.

  • Maple syrup gives a slightly richer flavor than honey.

  • Store bars in the fridge for up to a week or freeze for longer storage.
