Description

These mini baked Parmesan potato rounds are crispy on the outside, tender inside, and packed with cheesy, garlicky flavor. Perfect as a side dish, appetizer, or party snack, these roasted potato bites are oven-baked and super simple to make!


Ingredients

  • 4 medium russet potatoes, sliced into 1/4-inch rounds

  • 2 tablespoons olive oil

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 teaspoon dried parsley (optional)

  • Salt and pepper, to taste

  • Chopped fresh parsley, for garnish (optional)


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  • In a large bowl, toss the potato rounds with olive oil until well coated.

  • In a separate bowl, mix Parmesan cheese, garlic powder, paprika, dried parsley, salt, and pepper.

  • Press each potato round into the cheese mixture to coat one side generously.

  • Arrange the rounds in a single layer on the prepared baking sheet, cheese-side up.

  • Bake for 25–30 minutes, or until the potatoes are golden brown and crispy on the edges.

  • Garnish with fresh parsley if desired and serve hot.


Notes

  • For extra crispiness, broil for 2–3 minutes at the end of baking.

  • Serve with sour cream, ranch, or spicy aioli for dipping.
