These mini baked Parmesan potato rounds are crispy on the outside, tender inside, and packed with cheesy, garlicky flavor. Perfect as a side dish, appetizer, or party snack, these roasted potato bites are oven-baked and super simple to make!
Ingredients

4 medium russet potatoes, sliced into 1/4-inch rounds

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon dried parsley (optional)

Salt and pepper, to taste

Chopped fresh parsley, for garnish (optional)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, toss the potato rounds with olive oil until well coated.

In a separate bowl, mix Parmesan cheese, garlic powder, paprika, dried parsley, salt, and pepper.

Press each potato round into the cheese mixture to coat one side generously.

Arrange the rounds in a single layer on the prepared baking sheet, cheese-side up.

Bake for 25–30 minutes, or until the potatoes are golden brown and crispy on the edges.

Garnish with fresh parsley if desired and serve hot.

For extra crispiness, broil for 2–3 minutes at the end of baking.
