Description

This Mediterranean Pasta Salad is a vibrant, flavor-packed dish perfect for warm weather. Loaded with fresh veggies, olives, feta cheese, and tossed in a zesty dressing, it’s the ultimate side for cookouts, picnics, or easy lunches. A cool, refreshing twist on classic pasta salad!


Ingredients

  • 12 oz rotini or penne pasta

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1/2 cup red onion, thinly sliced

  • 1/2 cup Kalamata olives, sliced

  • 3/4 cup crumbled feta cheese

  • 1/2 cup bell pepper, chopped

  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 1/3 cup olive oil

  • 2 tablespoons red wine vinegar

  • 1 tablespoon lemon juice

  • 1 garlic clove, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste


Instructions

  • Cook pasta according to package directions. Drain and rinse under cold water to cool.

  • In a small bowl or jar, whisk together all dressing ingredients.

  • In a large bowl, combine cooked pasta, tomatoes, cucumber, red onion, olives, bell pepper, and parsley.

  • Pour dressing over salad and toss to coat evenly.

  • Add crumbled feta and gently mix.

  • Refrigerate for at least 30 minutes before serving to allow flavors to meld.


Notes

  • Can be made a day ahead for even better flavor.
