Ingredients

For the Meatballs:

  • 1 lb ground beef (or mix with pork/turkey)

  • 1 egg

  • 1/2 cup breadcrumbs

  • 2 cloves garlic, minced

  • 1/4 cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

For the Potatoes:

  • 4 medium potatoes, peeled & cubed

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • Salt & pepper

For the Cheese Topping:

  • 1 cup shredded mozzarella (or cheddar)

  • 1/4 cup grated Parmesan

  • Fresh parsley for garnish (optional)


Instructions

Step 1: Prepare the Potatoes

  1. Preheat oven to 400°F (200°C).

  2. Toss cubed potatoes with olive oil, paprika, garlic powder, salt, and pepper.

  3. Spread evenly in a greased or parchment-lined baking dish.

Step 2: Make the Meatballs

  1. In a large bowl, mix ground meat, egg, breadcrumbs, garlic, Parmesan, Italian seasoning, salt, and pepper.

  2. Form into 1½-inch meatballs.

Step 3: Assemble the Dish

  1. Nestle raw meatballs among the potatoes in the dish.

Step 4: Bake

  1. Bake for 30–35 minutes, or until potatoes are tender and meatballs are cooked through (165°F internal temp).
