Ingredients

  • 2 tablespoons olive oil

  • 1 pound boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 can (14.5 oz) diced tomatoes, drained

  • 1/2 cup sun-dried tomatoes, chopped

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • 1/2 teaspoon red pepper flakes (optional)

  • Salt and black pepper, to taste

  • 1 cup baby spinach, chopped

  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional)

  • Fresh basil and extra Parmesan for garnish


Instructions

  • In a large pot, heat olive oil over medium heat. Add chicken and cook until golden. Remove and set aside.

  • In the same pot, sauté onion until soft (about 3 minutes). Add garlic and cook for 30 seconds.

  • Add chicken broth, heavy cream, diced tomatoes, sun-dried tomatoes, basil, oregano, red pepper flakes, salt, and pepper. Stir to combine.

  • Return chicken to the pot. Simmer for 15–20 minutes.

  • Add chopped spinach and Parmesan cheese. Stir until cheese melts. Add cornstarch slurry if a thicker texture is desired.

  • Adjust seasoning to taste.

  • Serve hot, garnished with fresh basil and extra Parmesan.
