4 cups chicken broth

1 can (14.5 oz) diced tomatoes, drained

1/2 cup sun-dried tomatoes, chopped

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1 cup baby spinach, chopped

1/2 cup grated Parmesan cheese

1 tablespoon cornstarch mixed with 2 tablespoons water (optional)

Instructions

In a large pot, heat olive oil over medium heat. Add chicken and cook until golden. Remove and set aside.

In the same pot, sauté onion until soft (about 3 minutes). Add garlic and cook for 30 seconds.

Add chicken broth, heavy cream, diced tomatoes, sun-dried tomatoes, basil, oregano, red pepper flakes, salt, and pepper. Stir to combine.

Return chicken to the pot. Simmer for 15–20 minutes.

Add chopped spinach and Parmesan cheese. Stir until cheese melts. Add cornstarch slurry if a thicker texture is desired.
