Description

Marry Me Chicken Pasta is a rich and creamy dish packed with tender chicken, sun-dried tomatoes, and perfectly cooked pasta—all coated in a decadent Parmesan cream sauce. This irresistible, one-pot comfort food classic is so delicious, it might just lead to a proposal!


Ingredients

  • 8 oz dried pasta (penne or your choice)

  • 1 tbsp olive oil

  • 1/2 cup finely chopped onion

  • 3 cloves garlic, minced

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces

  • Salt and pepper, to taste

  • 1 tsp Italian seasoning

  • 1/2 cup sun-dried tomatoes (in oil), drained and chopped

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 1/4 tsp red pepper flakes (optional)

  • Fresh basil or parsley, for garnish


Instructions

  • Cook pasta according to package directions. Reserve ½ cup pasta water, then drain and set aside.

  • Heat olive oil in a large skillet over medium heat. Add onion and sauté until translucent, about 3 minutes.

  • Add garlic and cook for another 30 seconds until fragrant.

  • Add chicken, season with salt, pepper, and Italian seasoning. Cook until chicken is browned and cooked through, about 5–6 minutes.

  • Stir in sun-dried tomatoes, then add heavy cream, chicken broth, and Parmesan cheese. Stir until sauce is smooth and thickened, about 3–5 minutes.

  • Toss in cooked pasta, adding a splash of reserved pasta water if needed to loosen the sauce.

  • Garnish with fresh basil or parsley and serve hot.


Notes

  • Add spinach or mushrooms for extra veggies.

  • Use rotisserie chicken for a quicker version.
