Ingredients

8 oz dried pasta (penne or your choice)

1 tbsp olive oil

1/2 cup finely chopped onion

3 cloves garlic, minced

2 large boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

1 tsp Italian seasoning

1/2 cup sun-dried tomatoes (in oil), drained and chopped

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1/4 tsp red pepper flakes (optional)

Fresh basil or parsley, for garnish
Instructions

Cook pasta according to package directions. Reserve ½ cup pasta water, then drain and set aside.

Heat olive oil in a large skillet over medium heat. Add onion and sauté until translucent, about 3 minutes.

Add garlic and cook for another 30 seconds until fragrant.

Add chicken, season with salt, pepper, and Italian seasoning. Cook until chicken is browned and cooked through, about 5–6 minutes.

Stir in sun-dried tomatoes, then add heavy cream, chicken broth, and Parmesan cheese. Stir until sauce is smooth and thickened, about 3–5 minutes.

Toss in cooked pasta, adding a splash of reserved pasta water if needed to loosen the sauce.
