  • 25 pieces of Lotus biscuits
  • 1/2 cup melted butter

For the cheesecake layer:

  • 400g Kiri spread cheese
  • 1 cup liquid whipping cream
  • 3 tablespoons powdered sugar
  • 3 tablespoons Lotus butter

For the final layer:

  • 1/2 cup Lotus butter

Instructions

Prepare the biscuit layer:

  1. Crush the Lotus biscuits in a blender until fine.
  2. Mix with melted butter until well combined.
  3. Press the mixture firmly into a cheesecake pan.
  4. Freeze while preparing the cheesecake layer.

Prepare the cheesecake layer:

  1. Beat the whipping cream until stiff peaks form.
  2. In a separate bowl, mix Kiri cheese, powdered sugar, and Lotus butter until smooth.
  3. Gently fold in the whipped cream until fully incorporated.
  4. Pour the cheesecake mixture over the biscuit base.
  5. Refrigerate for at least 4-5 hours or until set.

Final layer & decoration:

  1. Melt the Lotus butter (microwave for 30 seconds if needed).
  2. Pour the melted Lotus butter over the cheesecake layer.
  3. Sprinkle crushed Lotus biscuits around the edges for decoration.
  4. Slice and serve chilled. Enjoy

Notes

  • For an extra crunchy base, bake the biscuit layer at 180°C (350°F) for 10 minutes, then let it cool before adding the cheesecake mixture.
  • Use full-fat cream cheese as an alternative to Kiri cheese for a richer texture.
