Description

Honey Roasted Carrots are a simple yet elegant side dish that brings out the natural sweetness of carrots with a glossy honey glaze. Seasoned with a touch of cinnamon and roasted to caramelized perfection, they’re ideal for holiday spreads or weeknight dinners alike.


Ingredients

  • 1 lb carrots, peeled and cut into 1-inch pieces

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp ground cinnamon (optional)

  • 1 tbsp fresh parsley, chopped (optional)


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a large bowl, whisk together olive oil, honey, salt, pepper, and cinnamon (if using). Add carrots and toss until evenly coated.

  • Spread carrots in a single layer on the baking sheet. Roast for 25–30 minutes, stirring halfway, until tender and lightly caramelized.

  • Sprinkle with parsley if desired and serve warm.


Notes

  • For extra depth, try adding a splash of balsamic vinegar or a pinch of red pepper flakes.

  • Baby carrots can be used whole as an alternative to chopped carrots.

  • This dish pairs well with roasted meats or grain bowls.
