1 lb carrots, peeled and cut into 1-inch pieces

2 tbsp honey

1/2 tsp ground cinnamon (optional)

1 tbsp fresh parsley, chopped (optional)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together olive oil, honey, salt, pepper, and cinnamon (if using). Add carrots and toss until evenly coated.

Spread carrots in a single layer on the baking sheet. Roast for 25–30 minutes, stirring halfway, until tender and lightly caramelized.

Sprinkle with parsley if desired and serve warm.
