Keywords: chicken mushroom pasta, creamy pasta recipe, easy weeknight dinner, chicken pasta with cream sauce.

Ingredients

  • 2 chicken breasts, sliced into strips

  • 8 oz pasta (penne or fettuccine)

  • 2 cups mushrooms, sliced

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.

  • Sear the Chicken: In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add chicken strips, season with salt and pepper, and cook until golden brown and cooked through (about 5–7 minutes). Remove and set aside.

  • Sauté the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add sliced mushrooms and cook until browned and tender, about 5 minutes.

  • Make the Sauce: Add minced garlic to the skillet and cook for 30 seconds. Stir in heavy cream and Parmesan cheese. Let it simmer gently until the sauce thickens, about 3–4 minutes.

  • Combine: Return the chicken to the skillet and add the cooked pasta. Toss everything together until well coated in the sauce.

  • Garnish and Serve: Sprinkle with chopped fresh parsley and serve warm.

Notes

  • Use cremini or baby bella mushrooms for deeper flavor.

  • Add a pinch of crushed red pepper flakes for a slight kick.

  • This dish pairs beautifully with garlic bread or a crisp green salad.
