Description

This Hearty Budget-Friendly Casserole is the ultimate comfort meal—layered with seasoned ground beef, tender potatoes, green beans, and creamy mushroom soup, then topped with melted cheddar. A family favorite made with pantry staples that’s perfect for busy weeknights!

Ingredients

  • 1 lb ground beef

  • 1 can (15 oz) cream of mushroom soup

  • 1 can (15 oz) green beans, drained

  • 1 large potato, peeled and thinly sliced

  • 1 small onion, chopped

  • 1 cup shredded cheddar cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and pepper to taste

  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish with olive oil.

  • In a skillet over medium heat, cook ground beef and chopped onion. Season with garlic powder, onion powder, salt, and pepper. Drain excess fat.

  • Layer the sliced potatoes evenly on the bottom of the casserole dish.

  • Add the cooked beef mixture on top, followed by a layer of green beans.

  • Pour the cream of mushroom soup over the entire dish, spreading evenly.

  • Sprinkle shredded cheddar cheese over the top.

  • Cover with foil and bake for 30 minutes.

  • Remove foil and bake an additional 10–15 minutes, or until potatoes are tender and cheese is melted and bubbly.

  • Let cool for a few minutes before serving.

Notes

  • Substitute ground beef with ground turkey or chicken for a lighter version.

  • Add mushrooms or corn for extra veggies.

  • Great for meal prep—stores well in the fridge for up to 3 days.
