Description

This Ground Beef and Chopped Cabbage recipe is a simple, wholesome skillet meal made with tender cabbage, juicy ground beef, tomatoes, and savory seasoning. Perfect for busy weeknights, it’s low-carb, budget-friendly, and packed with flavor.

Ingredients

  • 1 small cabbage, chopped (about 4-5 cups)

  • 1 lb ground beef

  • 1 can (15 oz) diced tomatoes (with juice)

  • 1 cup onions, chopped

  • 2 garlic cloves, minced

  • 1 tablespoon bouillon (beef or vegetable)

  • Salt and pepper, to taste

  • Optional: 1/2 teaspoon paprika or red pepper flakes for extra flavor

Instructions

  • In a large skillet or Dutch oven over medium-high heat, cook ground beef until browned. Drain excess fat if needed.

  • Add chopped onions and garlic to the beef and sauté for 2–3 minutes until fragrant.

  • Stir in chopped cabbage, canned tomatoes with their juice, and bouillon.

  • Reduce heat to medium-low, cover, and let simmer for 15–20 minutes, stirring occasionally, until cabbage is tender and flavors are well combined.

  • Season with salt, pepper, and optional spices to taste.

  • Serve hot as a complete meal or with a side of rice or bread.

Notes

  • Ground turkey or chicken can be used as a leaner substitute.

  • For a more filling dish, add cooked rice or quinoa at the end.

  • Leftovers store well and taste even better the next day.
