Description

These Baked Funfetti Donuts are a fun, colorful, and delicious treat that’s perfect for birthdays, celebrations, or anytime you want something sweet without the mess of frying. Light and fluffy with a vanilla glaze and rainbow sprinkles, they’re baked to perfection and ready in under 30 minutes!


Ingredients

For the Donuts:

  • 125g all-purpose flour

  • 100g granulated sugar

  • 1 tsp (4g) baking powder

  • 1/4 tsp (1g) baking soda

  • 1/4 tsp (1g) salt

  • 120ml buttermilk (or 120ml milk + 1 tsp lemon juice)

  • 1 large egg (approx. 50g)

  • 30g unsalted butter, melted

  • 1 tsp (5ml) vanilla extract

  • 40g rainbow sprinkles

For the Vanilla Glaze:

  • 120g powdered sugar

  • 1-2 tbsp (15-30ml) milk, as needed

  • 1/2 tsp (2.5ml) vanilla extract

  • Extra sprinkles, for topping


Instructions

  • Preheat oven to 175°C (350°F). Grease a donut pan well.

  • Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  • Mix wet ingredients: In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.

  • Combine: Pour the wet mixture into the dry ingredients and stir just until combined. Do not overmix.

  • Add sprinkles: Gently fold in the rainbow sprinkles.

  • Fill the pan: Spoon or pipe the batter into the donut cavities, filling each about 3/4 full.

  • Bake: Bake for 10–12 minutes or until the edges are lightly golden and a toothpick inserted comes out clean.

  • Cool: Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

  • Make the glaze: In a small bowl, whisk together powdered sugar, milk (start with 1 tbsp), and vanilla extract until smooth. Adjust consistency as needed.

  • Decorate: Dip cooled donuts into the glaze and top with extra sprinkles. Let set for 5–10 minutes.

  • Avoid overmixing to keep donuts tender.

  • Use gel food coloring for extra vibrant glaze if desired.
