1/4 tsp (1g) baking soda
-
1/4 tsp (1g) salt
-
120ml buttermilk (or 120ml milk + 1 tsp lemon juice)

1 large egg (approx. 50g)

30g unsalted butter, melted

120g powdered sugar
-
1-2 tbsp (15-30ml) milk, as needed
-
1/2 tsp (2.5ml) vanilla extract
-
Extra sprinkles, for topping
Instructions
-
Preheat oven to 175°C (350°F). Grease a donut pan well.
-
Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
-
Mix wet ingredients: In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
-
Combine: Pour the wet mixture into the dry ingredients and stir just until combined. Do not overmix.
-
Add sprinkles: Gently fold in the rainbow sprinkles.
-
Fill the pan: Spoon or pipe the batter into the donut cavities, filling each about 3/4 full.
-
Bake: Bake for 10–12 minutes or until the edges are lightly golden and a toothpick inserted comes out clean.
-
Cool: Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
-
Make the glaze: In a small bowl, whisk together powdered sugar, milk (start with 1 tbsp), and vanilla extract until smooth. Adjust consistency as needed.
-
Decorate: Dip cooled donuts into the glaze and top with extra sprinkles. Let set for 5–10 minutes.
Notes
-
Avoid overmixing to keep donuts tender.
-
Use gel food coloring for extra vibrant glaze if desired.
-
Donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
