Ingredients
-
1 box (15.25 oz) white cake mix
-
3/4 cup all-purpose flour
-
1 cup salted butter, softened
-
1 egg
-
30 soft caramels (unwrapped)
-
2 tbsp heavy cream
-
1 1/2 cups semi-sweet chocolate chips
-
1 tsp coconut oil or shortening (optional, for smooth melting)
Instructions
-
Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. -
Make Cookie Dough:
In a large bowl, mix cake mix, flour, softened butter, and egg until a soft dough forms. -
Shape and Bake:
Roll dough into 1-inch balls and place on prepared baking sheet. Flatten slightly with your palm or a flat-bottomed glass.
Bake for 9–11 minutes or until the edges are lightly golden. Cool completely. -
Prepare Caramel Topping:
In a microwave-safe bowl, melt caramels with heavy cream in 30-second bursts, stirring in between, until smooth. Spoon a small dollop onto the center of each cooled cookie. -
Add Chocolate Layer:
Melt chocolate chips (with coconut oil if using) in the microwave or a double boiler. Spoon or pipe chocolate over the caramel layer. Let set at room temperature or refrigerate briefly.
Notes
-
Use a piping bag or spoon for a neat chocolate finish.
-
For a richer flavor, substitute homemade shortbread for the cookie base.
-
These cookies store well in an airtight container for up to 5 days.
