Description

Ingredients

  • 3 tablespoons butter

  • 1 tablespoon olive oil

  • 1 teaspoon sugar

  • 4 large yellow onions, thinly sliced

  • 6 cups beef broth

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste

  • 1 baguette, sliced and toasted

  • 1 1/2 cups shredded Gruyère or Swiss cheese


Instructions

  • In a large pot, melt butter with olive oil over medium heat. Add sliced onions and sugar; cook for 25–30 minutes, stirring often, until onions are caramelized and golden brown.

  • Add beef broth, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer for 15–20 minutes.

  • Preheat broiler. Ladle soup into oven-safe bowls. Top each with toasted baguette slices and shredded Gruyère.

  • Broil for 3–5 minutes until the cheese is bubbly and golden. Carefully remove from oven and serve hot.

  • For deeper flavor, deglaze the pot with a splash of white wine or brandy before adding the broth.
