Ingredients

1 cup dragon fruit purée (preferably from red/pink dragon fruit for bold color)

8 oz mascarpone cheese

1 cup whipped cream (or whipped topping)
Instructions

In a bowl, beat mascarpone and sugar together until smooth and creamy.

Gently fold in the whipped cream until fully incorporated.

Lightly dip ladyfingers into the dragon fruit purée—do not soak.

Arrange a layer of dipped ladyfingers in the bottom of your serving dish.

Spread half the mascarpone mixture over the ladyfingers.

Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.

Smooth the top and optionally drizzle or swirl extra dragon fruit purée for garnish.
