Description

These Double-Stuffed Buffalo Chicken Jalapeño Poppers are the ultimate spicy snack! Packed with shredded chicken, Buffalo sauce, and melty cheese, then topped with buttery panko for crunch – they’re perfect for parties, game day, or anytime you want a bold, bite-sized appetizer.


Ingredients

8 large jalapeños, halved lengthwise and deseeded

1 cup cooked shredded chicken

1/4 cup cream cheese, softened

1/4 cup shredded cheddar cheese

1/4 cup Buffalo sauce

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 cup panko breadcrumbs

2 tablespoons melted butter


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a bowl, mix shredded chicken, cream cheese, cheddar cheese, Buffalo sauce, garlic powder, and black pepper until well combined.

  • Spoon or pipe the filling generously into each jalapeño half.

  • In a small bowl, mix panko breadcrumbs with melted butter.

  • Sprinkle the buttery panko mixture on top of each stuffed jalapeño.

  • Bake for 18–20 minutes, or until jalapeños are tender and tops are golden and crispy.

  • Let cool slightly before serving. Optional: serve with ranch or blue cheese dressing for dipping


Notes

  • For extra heat, leave some seeds in the jalapeños or use hot sauce in the filling.

  • Make ahead and bake just before serving.
