Ingredients

1 pound lean ground beef (85% or 90%)

3 large russet potatoes, sliced 1/4-inch thick

1 medium green bell pepper, chopped

1 medium onion, chopped

1 (14.5 oz) can diced tomatoes (with juice)

Salt and pepper, to taste

Optional: shredded cheese or parsley for garnish
Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

In a skillet over medium heat, brown ground beef until no longer pink. Drain excess grease and season with salt and pepper.

Layer half the potato slices on the bottom of the baking dish.

Top with half the beef, then sprinkle with half the chopped onion and bell pepper.

Repeat layers with remaining potatoes, beef, onion, and pepper.

Pour diced tomatoes (with juice) evenly over the top.

Cover tightly with foil and bake for 1 hour, or until potatoes are tender.

Uncover and bake an additional 10–15 minutes to reduce excess moisture or add shredded cheese on top and bake until melted.
