Description

Dolly Parton’s 5-Ingredient Casserole is a no-fuss, hearty meal made with ground beef, potatoes, peppers, onions, and juicy tomatoes—all baked together in one comforting dish. This budget-friendly, family-style casserole is full of old-fashioned charm and big on flavor with minimal effort.

Ingredients

  • 1 pound lean ground beef (85% or 90%)

  • 3 large russet potatoes, sliced 1/4-inch thick

  • 1 medium green bell pepper, chopped

  • 1 medium onion, chopped

  • 1 (14.5 oz) can diced tomatoes (with juice)

  • Salt and pepper, to taste

  • Optional: shredded cheese or parsley for garnish

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  • In a skillet over medium heat, brown ground beef until no longer pink. Drain excess grease and season with salt and pepper.

  • Layer half the potato slices on the bottom of the baking dish.

  • Top with half the beef, then sprinkle with half the chopped onion and bell pepper.

  • Repeat layers with remaining potatoes, beef, onion, and pepper.

  • Pour diced tomatoes (with juice) evenly over the top.

  • Cover tightly with foil and bake for 1 hour, or until potatoes are tender.

  • Uncover and bake an additional 10–15 minutes to reduce excess moisture or add shredded cheese on top and bake until melted.

  • Garnish with parsley, if desired, and serve hot.

Notes

  • For a Tex-Mex twist, add taco seasoning to the beef and a sprinkle of pepper jack cheese.

  • Use a mandoline slicer for evenly cut potatoes.

  • This casserole can be assembled ahead and refrigerated until ready to bake.
