4 cups fresh rhubarb, sliced into 1″ pieces

1 1/2 cups sugar

1 (3 oz) package strawberry Jello

4 cups miniature marshmallows

1 cup whipping cream
Instructions
1. Cook the Rhubarb:
1.1. In a large saucepan, combine rhubarb, water, and sugar.
1.2. Cook over medium heat for 10 minutes, stirring occasionally, until rhubarb is tender.
2. Add Jello and Marshmallows:
2.1. While hot, stir in strawberry Jello and miniature marshmallows.
2.2. Mix until fully dissolved.
3. Chill the Mixture:
3.1. Transfer to a bowl, cover, and refrigerate until completely cooled.
4. Whip the Cream:
4.1. Whip the cream in a separate bowl until stiff peaks form.
5. Combine and Chill:
5.1. Gently fold whipped cream into the cooled rhubarb mixture.
5.2. Chill again until ready to serve.
