1 cup unsalted butter, softened

3/4 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups rolled oats

1 cup chopped dates

3/4 cup chocolate chips

1/2 cup chopped walnuts (optional)
Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

Beat in eggs one at a time, then add vanilla extract.

In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients.

Stir in oats, dates, chocolate chips, and walnuts until evenly combined.

Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.

Bake for 10–12 minutes, or until edges are golden and centers are set.

Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
