Description

These quick and easy Date Cookies combine the best of chocolate chip and oatmeal cookies with a Middle Eastern twist. Packed with chewy dates, rich chocolate chips, and crunchy walnuts, these buttery treats are irresistibly soft and full of flavor. Perfect for snacking or gifting!


Ingredients

  • 1 cup unsalted butter, softened

  • 3/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups rolled oats

  • 1 cup chopped dates

  • 3/4 cup chocolate chips

  • 1/2 cup chopped walnuts (optional)


Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

  • Beat in eggs one at a time, then add vanilla extract.

  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients.

  • Stir in oats, dates, chocolate chips, and walnuts until evenly combined.

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.

  • Bake for 10–12 minutes, or until edges are golden and centers are set.

  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.


Notes

  • Use Medjool dates for the best texture and sweetness.

  • Substitute pecans or almonds for walnuts, or omit nuts entirely for a nut-free version.

  • Cookies can be frozen for up to 3 months.
