Description

Ingredients

  • 3 medium potatoes, peeled and grated (about 450g / 1 lb)

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 100g (1 cup) shredded cheddar cheese

  • 1 small onion, finely chopped

  • 2 large eggs

  • 1 tablespoon all-purpose flour

  • 1 teaspoon garlic powder

  • Salt and pepper, to taste

  • Oil, for frying


Instructions

  • Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

  • In a large bowl, combine the grated potatoes, corn kernels, shredded cheddar cheese, chopped onion, eggs, flour, garlic powder, salt, and pepper. Mix until well combined.

  • Heat a generous amount of oil in a skillet over medium heat.

  • Scoop about ¼ cup of the mixture and flatten into a patty. Carefully place into the hot skillet.

  • Cook each fritter for 3–4 minutes per side, or until golden brown and crispy.

  • Transfer cooked fritters to a paper towel-lined plate to drain excess oil.

  • Serve warm, optionally garnished with chopped green onions or a dollop of sour cream.
