Ingredients

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs or breasts

4 garlic cloves, minced

1 cup arborio or jasmine rice

2 1/2 cups chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

3 cups fresh spinach, chopped

1 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

Instructions

Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.

Season chicken with salt and pepper, then sear until golden brown and cooked through (about 5–6 minutes per side). Remove and set aside.

In the same pan, add minced garlic and sauté for 1 minute until fragrant.

Stir in the rice and toast lightly for 1–2 minutes.

Pour in the chicken broth, bring to a boil, then reduce heat and simmer covered for about 18–20 minutes, until rice is tender.
