Description

This Creamy Garlic Chicken with Parmesan Rice and Spinach is a one-pan comfort meal packed with flavor. Juicy chicken, creamy Parmesan rice, and tender spinach come together for a rich and satisfying dish that’s perfect for weeknights or special dinners.


Ingredients

  • 2 tablespoons olive oil

  • 1 pound boneless, skinless chicken thighs or breasts

  • Salt and black pepper to taste

  • 4 garlic cloves, minced

  • 1 cup arborio or jasmine rice

  • 2 1/2 cups chicken broth

  • 1/2 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 3 cups fresh spinach, chopped

  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • Fresh parsley for garnish


Instructions

  • Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.

  • Season chicken with salt and pepper, then sear until golden brown and cooked through (about 5–6 minutes per side). Remove and set aside.

  • In the same pan, add minced garlic and sauté for 1 minute until fragrant.

  • Stir in the rice and toast lightly for 1–2 minutes.

  • Pour in the chicken broth, bring to a boil, then reduce heat and simmer covered for about 18–20 minutes, until rice is tender.

  • Stir in heavy cream, Parmesan cheese, chopped spinach, Italian seasoning, and red pepper flakes. Cook until spinach is wilted and sauce is creamy.

  • Return the chicken to the skillet and spoon the creamy rice around it. Heat through.

  • Garnish with fresh parsley before serving.


Notes

  • Arborio rice creates a risotto-like texture, while jasmine rice offers a lighter consistency.

  • Adjust the cream and cheese quantities to your taste for a richer or lighter dish.

  • Great with a squeeze of lemon juice for brightness.
