Ingredients

  • 3 cups medium pasta shells, uncooked

  • 1 lb ground beef

  • 1 medium red bell pepper, diced

  • 1/2 large onion, diced

  • 1 tsp garlic, minced

  • 1 tbsp Italian seasoning

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 3 tbsp Land O Lakes® Butter with Olive Oil & Sea Salt (or regular butter)

  • 1/4 cup all-purpose flour

  • 2 cups beef broth

  • 1/2 cup sour cream

  • 1 cup mild cheddar cheese, shredded

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil a large pot of salted water and cook pasta shells according to package directions until tender. Drain and set aside.

  2. In a large skillet over medium heat, brown the ground beef with red bell pepper and onion until fully cooked. Drain excess fat.

  3. Add garlic, Italian seasoning, salt, and pepper. Cook until fragrant.

  4. Stir in butter until melted, then whisk in flour. Cook for 1 minute to form a roux.

  5. Gradually stir in beef broth, stirring constantly, until the sauce thickens slightly.

  6. Mix in sour cream and shredded cheddar cheese until melted and creamy.

  7. Fold in cooked pasta shells and stir until well combined.

  8. Garnish with fresh parsley and serve hot.

Notes

  • Substitute ground turkey or chicken for a lighter version.

  • Add mushrooms or spinach for extra veggies.

  • Use sharp cheddar or a cheese blend for bolder flavor.
