Ingredients

Cake:

  • 1/2 cup (1 stick) butter, softened

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 1 cup full-fat sour cream

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup mashed bananas (about 3 bananas)

Cream Cheese Frosting:

  • 1/2 cup (1 stick) butter, softened

  • 8 ounces cream cheese, softened

  • 3-4 cups powdered sugar

  • 1 teaspoon vanilla extract


Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

  • In a large bowl, cream together the butter and sugar until light and fluffy.

  • Beat in the eggs one at a time, then stir in the sour cream and vanilla.

  • Combine flour, baking soda, and salt; gradually mix into the creamed mixture.

  • Stir in the mashed bananas until just blended.

  • Pour batter into prepared pan and spread evenly.

  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  • Allow cake to cool completely before frosting.

  • For the frosting, beat together softened butter and cream cheese until smooth.

  • Gradually add powdered sugar until desired consistency is reached, then mix in vanilla extract.

  • Frost cooled cake and serve.


Notes

  • For an extra banana flavor, use very ripe bananas with brown spots.

  • You can add chopped walnuts or pecans to the batter for texture.
