  • 1/4 cup (55g) brown sugar, packed

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/2 cups (190g) all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon

For the cinnamon swirl:

  • 1 teaspoon ground cinnamon

  • 2 tablespoons unsalted butter, melted

For the cream cheese frosting:

  • 4 oz (113g) cream cheese, softened

  • 2 tablespoons (28g) unsalted butter, softened

  • 1 cup (120g) powdered sugar

  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.

  • Cream butter, granulated sugar, and brown sugar until light and fluffy.

  • Add egg and vanilla extract; mix until combined.

  • In another bowl, whisk flour, baking soda, salt, and cinnamon. Gradually mix into wet ingredients.

  • Press dough into pan evenly.

  • Mix swirl ingredients: brown sugar, cinnamon, and melted butter. Drop spoonfuls on dough and swirl gently with a knife.

  • Bake for 22–25 minutes or until golden and set. Cool completely.

  • Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until fluffy.

  • Spread frosting over cooled bars. Cut into squares and enjoy!

Notes

  • For extra decadence, sprinkle chopped pecans or drizzle caramel over the frosting.

  • Store bars in an airtight container in the refrigerator for up to 5 days.
