Description

Ingredients

For the Chicken Scampi:

  • 1 pound boneless, skinless chicken breasts, cut into strips or bite-sized pieces

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 teaspoon red pepper flakes (adjust to taste)

  • 1 cup chicken broth

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

  • 2 tablespoons chopped parsley (for garnish)

  • Grated Parmesan cheese (for garnish)

For the Garlic Parmesan Rice:

  • 1 tablespoon butter

  • 1 clove garlic, minced

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper, to taste


Instructions

  1. Make the Rice: In a saucepan, melt butter and sauté garlic until fragrant. Add rice and stir for 1–2 minutes.

  2. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15–18 minutes until rice is tender. Stir in Parmesan, season with salt and pepper, and keep warm.

  3. Cook the Chicken: In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper. Cook until browned and fully cooked through, about 5–7 minutes.

  4. Add garlic and red pepper flakes; sauté 30 seconds until fragrant.

  5. Pour in chicken broth and lemon juice. Simmer for 3–4 minutes until slightly reduced.

  6. Assemble: Spoon rice onto plates and top with chicken and sauce. Garnish with parsley and extra Parmesan.

  • Add spinach or zucchini for extra veggies.

  • Substitute shrimp for chicken to make it a seafood scampi.
