For the Chicken Scampi:

For the Garlic Parmesan Rice:

1 tablespoon butter

1 clove garlic, minced

1 cup long-grain white rice

2 cups chicken broth

1/2 cup grated Parmesan cheese

Instructions

Make the Rice: In a saucepan, melt butter and sauté garlic until fragrant. Add rice and stir for 1–2 minutes.

Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15–18 minutes until rice is tender. Stir in Parmesan, season with salt and pepper, and keep warm.

Cook the Chicken: In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper. Cook until browned and fully cooked through, about 5–7 minutes.

Add garlic and red pepper flakes; sauté 30 seconds until fragrant.
