Ingredients
-
4 boneless, skinless chicken breasts
-
2 tablespoons olive oil
-
3 cloves garlic, minced
-
1 shallot, finely chopped
-
1 package (5.2 oz) Boursin cheese with garlic and fine herbs
-
1/2 cup chicken broth
-
1/2 cup heavy cream
-
Salt and pepper to taste
-
Fresh parsley, chopped (for garnish)
-
Optional: a squeeze of fresh lemon juice
Instructions
-
Season chicken breasts on both sides with salt and pepper.
-
In a large skillet, heat olive oil over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
-
Add shallot and garlic to the same skillet. Sauté for 1–2 minutes until aromatic.
-
Reduce heat, then stir in Boursin cheese, chicken broth, and heavy cream. Stir until smooth and creamy.
-
Return chicken to skillet and simmer for 5–7 minutes, basting with sauce.
-
Adjust seasoning with salt, pepper, and lemon juice if using.
-
Garnish with chopped fresh parsley and serve hot.
Notes
-
For a lighter version, substitute half-and-half for cream.
-
Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
-
Leftovers reheat well and can be used in pasta or wraps.
