Description

These Chicken Bacon Ranch Roll-Ups are a low-carb, high-protein snack that’s packed with cheesy, smoky, and creamy goodness. Perfect for keto-friendly meal prep, party appetizers, or a quick bite, these roll-ups are super easy to make and bursting with flavor!


Ingredients

6 slices of mozzarella cheese
1 1/2 cups cooked shredded or grilled chicken
1/4 cup cooked bacon (2-3 slices, crumbled)
1 tablespoon low-carb ranch dressing
1 teaspoon finely sliced green onion


Instructions

Prepare the Cheese Wraps:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the mozzarella slices on the baking sheet, making sure they are not touching.
  3. Bake for 5-6 minutes, or until the cheese is melted and edges are slightly golden. Remove from the oven and let cool for 1-2 minutes until they are firm but still flexible.

2. Prepare the Filling:

  1. In a bowl, mix the shredded chicken, crumbled bacon, ranch dressing, and sliced green onions. Stir until well combined.

3. Assemble the Roll-Ups:

  1. Place a spoonful of the chicken mixture onto each melted cheese slice.
  2. Gently roll the cheese slice around the filling, securing the seam side down.
  3. Let cool for another 1-2 minutes so they hold their shape.

4. Serve & Enjoy:

  1. Serve warm with extra ranch dressing for dipping or enjoy as-is!

Notes

  • Air Fryer Option: Instead of baking, air fry the cheese slices at 350°F (175°C) for 4-5 minutes until they are soft and bubbly.
  • Want it crispy? After rolling, place them back in the oven or air fryer for 2-3 minutes to crisp up.
  • Add more flavor: Sprinkle in some smoked paprika or garlic powder to the filling for an extra kick.
  • Storage: Store leftovers in the fridge for up to 3 days and reheat in a pan or air fryer for a crispy texture.
