Description

Chewy Nutty Squirrel Bars are the perfect fusion of crunch and chew, packed with sweet brown sugar, rich butter, and loads of nuts for a snack that feels like a warm, crunchy hug. Great for lunchboxes, coffee breaks, or anytime cravings, these bars are irresistibly satisfying!

Ingredients

  • 1/2 cup unsalted butter, melted

  • 1 cup brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 cup mixed nuts (e.g., walnuts, pecans, almonds), chopped

  • 1/2 cup rolled oats (optional for extra chew)

Instructions

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

  • In a large bowl, mix the melted butter and brown sugar until well combined.

  • Beat in the eggs and vanilla extract until smooth.

  • In a separate bowl, whisk together flour, baking powder, and salt.

  • Gradually stir the dry ingredients into the wet mixture until just combined.

  • Fold in chopped nuts and oats if using.

  • Spread the batter evenly into the prepared baking pan.

  • Bake for 25–30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

  • Let cool completely before slicing into bars.

Notes

  • Customize with your favorite nuts or even add chocolate chips for a twist.

  • Store in an airtight container for up to 5 days.

  • For an extra treat, drizzle with melted chocolate or caramel once cooled.
