Description

This Cheesy Hashbrown Casserole is the ultimate comfort food – creamy, cheesy, and packed with tender hash browns. It’s the perfect side dish for holidays, potlucks, or any family meal.


Ingredients

For the Casserole:

  • 1 (32 oz) bag frozen hash browns, thawed

  • 1 (10.5 oz) can cream of chicken soup

  • 1 cup sour cream

  • 2 cups shredded cheddar cheese

  • 1/2 cup melted butter

  • Salt and pepper to taste

  • Optional: 1/2 cup chopped onions or green onions

  • Optional topping: 1 cup crushed cornflakes or Ritz crackers + 2 tbsp melted butter


Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  • Mix ingredients: In a large bowl, combine thawed hash browns, cream of chicken soup, sour cream, shredded cheese, melted butter, and onions if using. Season with salt and pepper.

  • Transfer to dish: Spread the mixture evenly into the prepared baking dish.

  • Optional topping: Mix crushed cornflakes (or crackers) with melted butter and sprinkle over the casserole.

  • Bake: Bake uncovered for 45–50 minutes, or until hot and bubbly with a golden top.

  • Serve: Let sit for 5–10 minutes before serving.


Notes

  • For a vegetarian version, substitute cream of mushroom soup.

  • You can add diced ham or bacon for extra protein.

  • Leftovers reheat well and can be frozen.
