  • 2 medium zucchinis

Aromatics & Seasonings

  • 4 cloves garlic, finely chopped or grated

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon Italian seasoning (optional)

Cheese

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

Garnish (optional)

  • Fresh parsley, chopped


Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  • Slice the zucchinis lengthwise into thick steaks, about ½ inch thick.

  • In a small bowl, mix the olive oil, chopped garlic, salt, pepper, and Italian seasoning.

  • Brush both sides of the zucchini steaks generously with the garlic oil mixture.

  • Arrange the zucchini on the prepared baking sheet.

  • Bake for 10–12 minutes, or until the zucchini starts to soften.

  • Remove from the oven and sprinkle evenly with mozzarella and Parmesan cheeses.

  • Return to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.

  • Broil for 1–2 minutes if you want the cheese golden and slightly crispy.

  • Garnish with chopped parsley before serving.


Notes

  • For extra flavor, sprinkle red pepper flakes over the cheese before baking.

  • You can swap mozzarella for provolone or gouda for different cheesy flavors.

  • These “steaks” are best enjoyed fresh but can be reheated under the broiler.
