Description

This Cheesy Garlic Butter Mushroom Stuffed Chicken is a flavorful and indulgent dinner option featuring juicy chicken breasts filled with a creamy mushroom and cheese stuffing. A perfect balance of garlic butter, herbs, and cheesy goodness for a restaurant-worthy meal at home.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup mushrooms, finely chopped (cremini or white button)

  • 1/2 cup cream cheese, softened

  • 1/2 cup shredded mozzarella cheese

  • 3 tablespoons butter

  • 3 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • Salt and pepper, to taste

  • 1/4 cup grated Parmesan cheese

  • Fresh parsley, for garnish


Instructions

  • Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease a baking dish.

  • In a skillet over medium heat, melt 1 tablespoon of butter. Sauté chopped mushrooms for 5–7 minutes, or until softened and moisture is evaporated. Add garlic and cook for 1 minute. Remove from heat.

  • In a bowl, mix the cooked mushrooms with cream cheese, mozzarella, thyme, parsley, salt, and pepper.

  • Using a sharp knife, slice a pocket into each chicken breast, being careful not to cut all the way through.

  • Stuff each chicken breast with the mushroom-cheese mixture. Secure with toothpicks if needed.

  • In the same skillet, melt the remaining butter and sear each stuffed chicken breast for 2–3 minutes per side until golden brown.

  • Transfer to the prepared baking dish, sprinkle with Parmesan cheese, and bake for 20–25 minutes, or until the chicken is cooked through (internal temp of 165°F/74°C).

  • Garnish with fresh parsley and serve warm.

  • For extra flavor, add chopped spinach to the mushroom filling.
