Description

Cheesy Baked Fajita Chicken is a bold, flavorful dinner featuring tender chicken breasts seasoned with classic fajita spices, smothered in sautéed peppers and onions, and topped with melted cheese. A Tex-Mex favorite that’s simple, satisfying, and oven-baked to perfection!


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 yellow onion, sliced

  • 1 cup shredded Mexican blend or cheddar cheese

  • Fresh cilantro (for garnish)

  • Lime wedges (for serving)


Instructions

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish.

  • In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.

  • Rub chicken breasts with olive oil and then coat with the spice mixture.

  • Place chicken in the baking dish and top evenly with sliced peppers and onions.

  • Cover with foil and bake for 25 minutes.

  • Remove foil, sprinkle cheese over the top, and bake uncovered for another 10–15 minutes until chicken is fully cooked and cheese is melted.

  • Garnish with fresh cilantro and serve with lime wedges.


Notes

  • Great served over rice, in tortillas, or with a side of beans.

  • Add jalapeños for extra heat.

  • Use boneless thighs for a juicier alternative.
