4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

1 cup shredded Mexican blend or cheddar cheese

Fresh cilantro (for garnish)

Lime wedges (for serving)
Instructions

Preheat oven to 400°F (200°C). Lightly grease a baking dish.

In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.

Rub chicken breasts with olive oil and then coat with the spice mixture.

Place chicken in the baking dish and top evenly with sliced peppers and onions.

Cover with foil and bake for 25 minutes.

Remove foil, sprinkle cheese over the top, and bake uncovered for another 10–15 minutes until chicken is fully cooked and cheese is melted.

Garnish with fresh cilantro and serve with lime wedges.
