4 large artichokes

1/4 cup unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

Instructions
Step 1: Preheat the Oven

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Prepare the Artichokes
2. Trim 1–2 inches from the top of each artichoke.
3. Trim stems so the artichokes sit flat and snip pointy tips off leaves with scissors.
Step 3: Halve and Clean the Artichokes
4. Slice artichokes in half lengthwise.
5. Scoop out the fuzzy choke using a spoon, keeping the heart intact.
Step 4: Make the Garlic Butter
6. In a bowl, mix melted butter, garlic, lemon juice, lemon zest, salt, and pepper.
Step 5: Coat the Artichokes
7. Brush cut sides of artichoke halves generously with the garlic butter mixture.
Step 6: Roast the Artichokes
8. Place cut side down on baking sheet. Roast for 35–40 minutes until tender and golden.
