Description

Ingredients

• 2 tablespoons unsalted butter
• 2 tablespoons all-purpose flour
• 3/4 cup beer (lager or ale)
• 3/4 cup whole milk
• 1 teaspoon Dijon mustard
• 1/2 teaspoon garlic powder
• 1/4 teaspoon smoked paprika
• 1/4 teaspoon salt (or to taste)
• 1/4 teaspoon ground black pepper
• 2 cups sharp cheddar cheese, shredded
• 1/2 cup mozzarella cheese, shredded


Instructions

  • Make the Roux:
    In a medium saucepan over medium heat, melt butter.
    Whisk in flour and cook for 1 minute, stirring constantly, until a thick paste forms.

  • Add Liquids:
    Gradually pour in beer and milk while whisking continuously.
    Cook until mixture thickens, about 3–4 minutes.

  • Season:
    Stir in Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Mix well.

  • Add Cheese:
    Reduce heat to low and gradually stir in shredded cheddar and mozzarella until melted and smooth.

  • Serve:
