Description

This baked burrito casserole is a hearty Tex-Mex dinner layered with seasoned beef, refried beans, gooey cheese, and zesty enchilada sauce. It’s the ultimate comfort food, easy to assemble, and a family favorite for busy weeknights or casual gatherings.


Ingredients

  • 1 pound ground beef

  • 1 small onion, chopped

  • 1 (1 oz) packet taco seasoning

  • 1 (16 oz) can refried beans

  • 1 (10 oz) can enchilada sauce

  • 1/2 cup sour cream

  • 6 large flour tortillas

  • 2 cups shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • Optional: chopped green onions and diced tomatoes for garnish


Instructions

  • Preheat oven to 350°F (175°C).

  • Cook the Beef:

    • In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft.

    • Drain excess fat and stir in taco seasoning.

  • Assemble the Filling:

    • Stir the refried beans and sour cream into the seasoned beef mixture.

  • Layer the Casserole:

    • Spread a few tablespoons of enchilada sauce on the bottom of a 9×13 inch baking dish.

    • Layer 2 tortillas, then add 1/3 of the beef mixture, drizzle enchilada sauce, and sprinkle with cheddar and Monterey Jack cheese.

    • Repeat layers two more times, ending with tortillas, sauce, and remaining cheese on top.

  • Bake:

    • Cover with foil and bake for 25 minutes.

    • Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.

  • Garnish & Serve:

    • Let sit for 5–10 minutes before slicing.

    • Garnish with green onions and diced tomatoes if desired.


Notes

  • Substitute ground turkey or black beans for a lighter version.

  • Use corn tortillas for a gluten-free option.

  • Add jalapeños or hot sauce for a spicy kick.
