This baked burrito casserole is a hearty Tex-Mex dinner layered with seasoned beef, refried beans, gooey cheese, and zesty enchilada sauce. It’s the ultimate comfort food, easy to assemble, and a family favorite for busy weeknights or casual gatherings.
Ingredients

1 pound ground beef

1 small onion, chopped

1 (1 oz) packet taco seasoning

1 (16 oz) can refried beans

1 (10 oz) can enchilada sauce

1/2 cup sour cream

6 large flour tortillas

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Optional: chopped green onions and diced tomatoes for garnish
Instructions

Preheat oven to 350°F (175°C).

Cook the Beef:

In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft.

Drain excess fat and stir in taco seasoning.

Assemble the Filling:

Stir the refried beans and sour cream into the seasoned beef mixture.

Layer the Casserole:

Spread a few tablespoons of enchilada sauce on the bottom of a 9×13 inch baking dish.

Layer 2 tortillas, then add 1/3 of the beef mixture, drizzle enchilada sauce, and sprinkle with cheddar and Monterey Jack cheese.

Repeat layers two more times, ending with tortillas, sauce, and remaining cheese on top.

Cover with foil and bake for 25 minutes.

Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.

Let sit for 5–10 minutes before slicing.
