For the Scrambled Eggs:
- 2 large eggs
- 1/2 tbsp olive oil or butter
- Salt & black pepper, to taste
For the Side Salad:
- 1/2 cup cherry tomatoes, halved
- 1/2 cup arugula
- 1 tsp olive oil
- 1/2 tsp balsamic vinegar
- 1 tbsp crumbled feta cheese
- Salt & pepper, to taste
Instructions
1️⃣ Make the Avocado Toast:
- Mash avocado with lemon juice, salt, and pepper.
- Spread it over toasted whole-grain bread.
- Sprinkle with crumbled feta and red pepper flakes for extra flavor.
2️⃣ Cook the Scrambled Eggs:
- Heat olive oil or butter in a pan over medium-low heat.
- Crack the eggs into a bowl and whisk until combined.
- Pour into the pan and stir continuously for soft, creamy scrambled eggs.
- Season with salt and black pepper.
3️⃣ Prepare the Side Salad:
- In a bowl, toss arugula and cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper.
- Sprinkle with crumbled feta cheese.
