  • 1 slice whole-grain bread, toasted
  • 1/2 ripe avocado, mashed
  • 1/2 tsp lemon juice
  • 1 tbsp crumbled feta cheese
  • Salt & black pepper, to taste
  • Red pepper flakes (optional, for spice)

For the Scrambled Eggs:

  • 2 large eggs
  • 1/2 tbsp olive oil or butter
  • Salt & black pepper, to taste

For the Side Salad:

  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup arugula
  • 1 tsp olive oil
  • 1/2 tsp balsamic vinegar
  • 1 tbsp crumbled feta cheese
  • Salt & pepper, to taste

Instructions

1️⃣ Make the Avocado Toast:

  • Mash avocado with lemon juice, salt, and pepper.
  • Spread it over toasted whole-grain bread.
  • Sprinkle with crumbled feta and red pepper flakes for extra flavor.

2️⃣ Cook the Scrambled Eggs:

  • Heat olive oil or butter in a pan over medium-low heat.
  • Crack the eggs into a bowl and whisk until combined.
  • Pour into the pan and stir continuously for soft, creamy scrambled eggs.
  • Season with salt and black pepper.

3️⃣ Prepare the Side Salad:

  • In a bowl, toss arugula and cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper.
  • Sprinkle with crumbled feta cheese.

4️⃣ Assemble & Serve:
